At Home Tips

  • Temper out lamb for 3 days in your refrigerator before preparing
  • Pat surface of lamb with clean, paper towels. There is no need to rinse it before cooking.
  • To keep roast and leg cuts juicy, do not remove the "fell" a thin paper like covering on the outer fat.
  • For moist, tender lamb, serve it slightly pink in color.
  • Use the 'touch" test to check the cooking doneness of small cuts. Slightly press down on the lamb. "Medium Rare" lamb will feel soft, slightly spongy and springy, "medium" will be slightly firm and springy and "well done" will be firm.
  • When using large cuts, use an instant-read thermometer and remove 5-10 degrees before desired temperature, cover and let rest for 5 minutes. As the lamb rests, it will continue to cook.
  • Pat yourself on the back for a meal your guests are bound to enjoy.

On the Stove Top

In a nonstick skillet, heat one to two tablespoons of olive oil. Add chops and cook approximately 10 minutes or to desired doneness, turning once halfway during cooking.

On the Grill

 Prepare charcoal for grilling. Place chops on grill rack, directly over medium heat, and approximately four inches from coal. Grill 9 to 13 minutes for a 1-inch-thick chop, or desired doneness. Turn once halfway during cooking.
