INGREDIENTS
• 1-2 lbs rabbit
• 3 potatoes quartered
• 4 carrots sliced
• 1/2 medium chopped
• 1/2 teaspoon Kosher salt
• 1/4 cup beef consomme
• 1/2 cup broth
• 3/4 teaspoon pepper
• 1/8 teaspoon basil
• 1 bay-leaf
• 1/8 teaspoon rosemary
• 1/8 teaspoon thyme
DIRECTIONS
• Cut rabbit into pieces. Layer onion, potatoes, and carrots in bottom of a crock pot.
• Add spices to the pot.
• Add rabbit, salt, pepper, consommé, and about 3/4 cup beef broth.
• Cover and cook on low for 6-8hours. Thicken gravy as desired.
• Serve in a medium to large bowl/dish.
• Have your favorite bread as a side for dipping in the stew.

Instructions
Step 1 - Combine all Prairie Natural Cajun Seasoning Mix ingredients in a small bowl.
Step 2 - Pat fillets dry with paper towels. Season the fillets liberally with Prairie Natural Cajun Spice Mix on both sides, pressing the seasoning into the fish with your hands. Wash hands thoroughly.
Step 3 - Cut potato in the lemon wedge pieces and light coat with olive oil and salt and pepper. Wash tomatoes leave whole. Cut asparagus so just tips and about 1-2 inches of stalk and wash. Slice red onion into ¼ inch strips ” See picture”
Step 4 - Place a large sauté pan over medium-high, preferably a cast iron griddle to give nice char lines. Add potatoes wedges and spread out over the griddle or pan. Cook until grill lines appear then flip and add tomatoes, onions, and asparagus and turn as needed. As soon as you add the potatoes add the fish and cook as below in step 5 in a separate pan.
Step 5 - Place a large sauté pan over medium-high heat and add butter and oil. When the fat is nice and hot, add the seasoned fish. Cook, undisturbed, for several minutes, until golden brown on one side. Flip fish over and continue to cook until opaque and completely cooked through.
Step 6 - Squeeze lemon juice over the fish.
Step 7 – Align the potatoes, tomatoes, and asparagus nicely on your favorite plate and add the Mahi-Mahi and garnish with the red onions and serve with lemon wedges.
